In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. It will be my pleasure welcoming you with a cup of coffee before visiting our cellar and garden where we'll pick some vegetables to use for the class. We'll drive to our 12th-generation winery, Wich is not open to the public, in the gorgeous wine country of Chianti Classico DOCG Denomination of Controlled and Guaranteed Origin. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Depending on the period we will go to different types of woods and the meeting point may change. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. ARE YOU READY FOR A ROMAN COOKING EXPERIENCE? You'll be welcomed into a Grandma's house to learn the ancient and famous art of making handmade pasta. We will make pasta from scratch. We will be a maximum of 8 participants like in a real Italian family to make everything more authentic :) You'll be able to make traditional Italian pasta like Ravioli, Fettuccine, Tortellini, Cappelletti, Spaghetti alla Chitarra, and more. Using only the freshest ingredients, Riccardo and his team will also show you how to prepare famous Italian sauces. Since we are Roman chefs, all born and raised in Rome, the experience will be focused on famous Roman sauces like Arrabbiata, Amatriciana, Cacio & Pepe, or Carbonara. Don't worry if you're vegetarian, there is a special menu also for you! Together we will take a historical / cultural walk through the streets of Trastevere, a well-known and peculiar district of Rome, it embodies the typical and "Romanesque" style in its soul. We will also do some typical tastings, such as supplì (rise balls), Roman pizza and traditional local biscuits, baked in a historic bakery in the neighborhood. Between one stop and another, we will discover the history and essence of this neighborhood, with its alleys and craft shops. You will see where the first Jewish synagogue in Rome stood and you will discover another uniqueness of Rome: the Tiber Island, a strip of land along the river Tiber, which houses a small village. You will hear the stories of illustrious inhabitants of this district, such as the beautiful Fornarina, muse and lover of the painter Raphael. I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need.
